You can cook like the Miami football coaches

The global quarantine has created an increase in home cooking. That includes Miami football coaches. Past Hurricanes head coaches Howard Schnellenberger and Mark Richt were included in an ESPN article with recipes from current and past college football coaches.

Home cooking has increased with most people spending the vast majority of their time at home quarantined. David Hale of ESPN wrote an article posted Wednesday examining recipes from past and current college football coaches. Former Miami football coaches Mark Richt and Howard Schnellenberger were included.

Many of the recipes posted by Hale, including Schellenberger’s for chicken came from the 1983 Orange Bowl cookbook. The list of recipes in the Orange Bowl Cookbook read like a who’s who of legendary college football coaches. Darryl Royal of Texas, Florida State’s Bobby Bowden and Nebraska’s Tom Osborne and Bob Devaney.

Cooking like the Miami football head coaches is the most concerning to Hurricanes’ fans. Richt is renowned for his gastronomy. The most recent Miami head coach emeritus has explained the best way to eat a sandwich and gone into detail about his favorite meal hot dog delight and its origin.

Richt went into explicit detail about Hot Dog Delight as explained by Hale. Hot Dog Delight is a typical dinner taking what you have in the pantry and throwing something together. The explanation Richt gave sounds like something that would be described on Top Chef.

"Hot Dog DelightBread of your choiceHot dogsSliced cheeseBaked beans“When you cut the dogs, you cut ’em lengthwise, so when you cut them in half, they’ll lay flat with the rounded sides up. Cheese has to cover every inch of the bread. You’ve got to get the best coverage of the bread as possible. Broil it. If you broil it and that cheese isn’t covering it, your bread’s gonna burn.You want cheese with every bite. Add as many baked beans as possible. I used to use Van Camp’s pork and beans, but I’ve eased off that. Any kind of baked beans will work. Throw a little ketchup on top.”"

Schnellenberger and his wife Beverly according to Hale added their recipe for Winning Ways Chicken to the 1983 Orange Bowl Cookbook. The Orange Bowl Cookbook was published in 1983 with contributions from coaches whose teams had competed in the Classic. Schnellenberger won the 1984 game with Miami.

The Miami victory over Osborne and Nebraska in the 1984 game was one of the biggest upsets in the history of college football. The Hurricanes vaulted from fifth to the national championship with the victory over the Cornhuskers. Nebraska was proclaimed as the best team in college football history in 1983.

Schnellenberger was not finished contributing recipes. According to Hale the godfather of modern Miami football also provided recipes to great college coaches cookbook that was published in 1988. Schnellenberger’s thoughts on cooking and the Winning Ways Hot Chicken salad recipe follows.

Joe Rose did ask Manny Diaz about his wife in the kitchen during the Hurricanes head coach’s appearance on Monday. The discussion did not get very far as Diaz implied the kitchen is the domain of his wife. It would be interesting to hear how the Miami coaches, staff and players are adapting to having to cook more meals at home.
